Will changing the flour brand of cookies make a different affect?

This is my science project and i can't find anything about itWill changing the flour brand of cookies make a different affect?in some flours' the protein content is either higher or lower. this may cause the cookies to be harder or softer. but in most store bought flours as long as its all purpose' it will not make much of a difference. never over mix cookie dough. that would make the cookies a little tough.just remember; cake flour makes a soft cookie. bread flour makes a hard cookie. all purpose flour makes a semi soft cookie .with all cookies over baking will cause dryness and the cookies will not last long.hope this helps have a good day.Will changing the flour brand of cookies make a different affect?it could make a difference in taste ..but that is all ..some flours have different taste to the professional cooks and some flours have different qualities to cooks.
